Dunn's River Fine Cornmeal, also known as Polenta, has a variety of uses as an ingredient in cornbread, scones and biscuits. For a truly exotic taste of the Caribbean, enjoy dumplings made with Dunn's River Cornmeal and serve with Jamaica's national dish of Ackee and Saltfish.
Place 176g Dunn's River Fine Cornmeal in a large, heavy saucepan. Gradually stir in 850ml of water. Bring to the boil stirring continuously, then simmer, stirring frequently for 5-10 minutes until the mixture is thick and no longer grainy. Season with salt and pepper and, if liked, stir in butter and Parmesan cheese. Either serve straight away or pour onto a cool surface to a thickness of 1-2cm. Leave to become cold and firm and cut into squares, then fry or grill until browned.
